They MIGHT throw up the CEL light, this can be mapped out at a custom tuners or if you get a generic stage 2 map the mapping out of the light is included as standard. Alternativly you can buy spacers for the lambda probes but its not guarenteed to cure it.

Also because your telling the car to inundate the lambdas from the heater circuit you don't need them, so leave them in your original cats and just unplug them. Saves breaking them for no reason! Just buy a couple of blanks

You can just return cats and sensors for mot then.

Makes sense Paul... After all, most people say they're a bitch to get out at times.. Makes sense to leave them in and blank them off, that way it's, as you say, a straight swap come MOT time.
