Mk4 R32 hesitation in every gear ?

Hi fellow R32 owners.
Let me start by introducing my self, im Kasper and i'm from Denmark (sorry for my english, its not my first language), i've had my Golf V6 4M for about a year, when i swapped the engine for a R32 with 95.000 miles on it and new timing chains.
Now i've been driving it for about a month and what a diffrence! wow. Great engine.
BUT ! i have a little problem with hesitation. I read some other threads about R32 hesitation, but my problem is not the same as other discribe theirs.
When i drive normal in, lets say 2. gear, and give it full throttle, the car hesitates for a few seconds and then pull like it should. The funny ting is,its not allways but maybe 60% of the times i accelerate.
I've had my VCDS on and no DTC's :S
While driving i opend block 060 i mess. blocks and watched while accelerating, and when hesatating the throttle body is stuck at 35% for a few seconds and then opens full, and pulls like it should.
Now i just went for a longer hiway drive, and after 30min. i had an EPC lamp on (still no DTC's). When that lamp is on, the car no longer hesitates, why?
This EPC lamp resets itself and the car is back to hesitation.

I've tried changing brake-light switch, clutch switch, MAF and throttle body alignment but no difference.
What should i do now?

Thanks for all the replys.
First, i cleaned the tb and then re align.
I'm pretty shure theres no vacum leaks.
I thought about the coils but then i think i would se a DTC.

Thanks CorradoR32. How do i data log? I havent got my vcds for vers long.
This happens at all temperatures.
Intake manifold flap will be inspected tomorrow, but i Think it works. It must chance at 1100 rpm and then again at 4200 right?
The changeover valve works.
Okay i will try the data log thing tomorrow, wich blocks do i need to log? I can only choose 3 right?

I think youre right about the nanny state thing, too bad you can't turn it off

Hi guys. New update, i still havent data log'ed anything because my pc has a bad battery so i need another.
But yesterday when i was driving on the highway, the EPC lamp and the one that shows an engine, came on. So i put my VCDS on and got 2 engine fault codes:
16825 - EVAP Emission Controle Sys: Incorrect Flow
P0441 - 002 - Lower Limit Exceeded - Intermittent
16485 - Mass Air Flow Sensor (G70): Implausible Signal
P0101 - 008 - Implausible Signal

And there was no hesitation, the car pulled like it should, GREAT to drive. Then when i started it today, the lamps were off and back to hesitation


So i tried pulling the connector to the MAF off, and same reaction as yesterday, pulls just like it should..! Do i have a wrong MAF?
I started out with a MAF from my 2.8 24V (because VW said it was the same one), then i changed it to a new one (bought for a R32) and still no change, so my MAF cannot be faulty, but it could be wrong?

Its a MK4 engine i've fitted, but the ECU was remaped by the former owner, and i did't get the MAF, the flex pipe from the throttle body or the airbox. so don't know if the former owner did the DSG MAF remap ? and of course now i cannot get in contact with him, because it was more than 1 year ago.

I will try data log when i get another pc hopefulle this week.
Problem solved!
Today i bought a DSG MAF, and it turns out the former owner got the ECU remaped for the DSG MAF. Now it drives perfectly !
