Recently updated to system 2.10 from http://uk.playstation.com/help-support/ps3/guides/detail/item89434/ via a USB Key.
Since update games seem to be freezing randomly and regularly throughout game play (Uncharted & Ratchet & Clank) Has anyone else done the update and if so experienced this??

I've had the update since the middle of December and the PS3 has been fine. I think it froze once when I was loading up PES so not even sure if that's related.
I think a long HDMI cable will degrade your picture a little, but not so much as to make the game freeze. Online is sometimes pretty crap on PES, which is a shame.
